One of my favorite things about spring is the birth of new life. I can’t help but get excited when I discover a bird’s nest filled with beautifully speckled eggs or part of a cracked shell lying on the forest floor.

How to Make Bird’s Nest Cookies
Our crunchy Bird’s Nest Cookies boast the perfect combination of peanut butter and sweet butterscotch, and I’ve yet to meet a person who doesn’t love Cadbury Mini Eggs!
These cookies are perfect for spring parties, Easter, or as a lunchbox treat.
Ingredients for Haystack Cookies
- 1 bag of chow mein noodles
- 1 regular sized bag of butterscotch chips
- 1 cup peanut butter
- Cadbury Mini Eggs
Directions for Cookies
1. Melt the peanut butter and butterscotch chips together in the microwave or over low heat. Stir in the Chow Mein noodles.
2. Use an ice-cream scoop to place “nests” of the creamy Chow Mein noodle mixture onto a parchment-lined pan.
3. Place 2–3 eggs into every nest. Put the cookies in a cool location to harden.
My children thought these were great and enjoyed them as a lunchbox treat!
