Before you get started, make sure you have all the right ingredients.
For the strawberry filling:
- Fresh strawberries, hulled and sliced
- Granulated sugar
- Cornstarch

- Rolled oats (old-fashioned oats)
- All-purpose flour
- Light brown sugar, packed
- Cinnamon
- Salt
- Unsalted butter, melted
How to Make Strawberry Crisp Dessert
This strawberry crisp recipe is one of those easy, go-to desserts that’s perfect for weeknights, potlucks, or anytime you find yourself with a few extra strawberries on hand. It’s simple, comforting, and always a crowd-pleaser. Follow the directions below to see how to make it.
STEP 1: Prep your supplies and ingredients. Preheat the oven to 350°F (175°C). Lightly grease an 8×8-inch (or similar-sized) baking dish. Get those strawberries washed and chopped!
STEP 2: Make the strawberry filling. In a large bowl, toss the sliced strawberries with sugar, cornstarch, vanilla extract, and lemon zest.
I prefer my strawberry crisp on the juicer side, but you may add 1–2 more tablespoons of cornstarch if you wish for it to be thicker than what you see in my photos. Also keep in mind that crisp is a very forgiving dessert—if you add extra strawberries no one is going to complain about it!
STEP 3: Let the strawberries rest. Stir the strawberry mixture until it’s well combined, then spread it evenly in the prepared baking dish. Allow the mixture to rest for about 15 minutes so the sugar can draw out some of the strawberry juice.
STEP 4: Prepare the crisp topping. While the strawberries are resting, mix the oats, flour, brown sugar, cinnamon, and salt. Pour in the melted butter and stir until the mixture becomes crumbly.
STEP 5: Assemble the crisp. Evenly sprinkle the crisp topping over the strawberry filling.
STEP 6: Bake the crisp. Bake for 35-40 minutes, or until the topping is golden brown and the filling is bubbly.
STEP 7: Allow to cool. Allow your crisp to cool before serving with whipped cream or vanilla ice cream.
