As a busy parent, I don’t need to tell you how hectic school nights can be! Between homework, sports, and the occasional after-school errand, dinnertime often sneaks up like a ninja! Having a simple plan in place is often the difference between eating cereal or a well-balanced, wholesome meal for dinner. Shared below is a kid-approved school night dinner menu for 1 week. Fridays are pizza and movie night in our house! I lay a spread of sauce, pitas, cheese, pepperoni, and fresh veggies on the kitchen table so the boys can create their own Pita Pizzas. Bake the pizzas in the oven on a parchment lined pan at 400º until they are ready (about 10 minutes).
