The thing is, my kids appear to be tired of the same old, same old blended fruit popsicles I always make them. I can’t believe it, but they’ve actually been turning them down! I scoured Pinterest for some eye candy and came across this pin from My Baking Addiction for No Bake Raspberry-Lemon Cheesecakes. I couldn’t help but wonder how they would taste frozen!

I substituted blackberries for raspberries, gluten-free graham crackers for regular, and accidentally left out the vanilla extract and lemon juice. I sprinkled the graham cracker crust loosely into the bottom of six 4 oz. mason jars, then spooned the filling to the top of the jar. I sprinkled a second light layer of graham cracker crust on the top, and then pressed a wooden bowtie craft stick into each jar.
After several hours in the freezer, the Blackberry Cheesecake Pops were de-liii-cious! Best of all, they simply softened as my children enjoyed them. There were no melty drips, stained t-shirts, or sticky fingers! This summer treat is sweet, but will not make your teeth ache! It tastes just like creamy cheesecake.
